Sweet Corn Soup

Ingredients:

  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 cup mixed vegetables (carrots, peas, corn, beans), finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 4 cups vegetable broth
  • 2 tablespoons cornstarch (mixed with 2 tablespoons water to make a slurry)
  • 2 tablespoons soy sauce
  • 1 tablespoon oil (vegetable or sesame oil)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Optional: 1 teaspoon sesame oil for flavor

Instructions:

  1. Prepare the Vegetables:
    • Finely chop the mixed vegetables of your choice. You can use carrots, peas, corn, and beans.
  2. Cook the Sweet Corn:
    • If using fresh corn, boil the corn on the cob until it’s cooked. Once cooled, cut the kernels off the cob. If using frozen corn, thaw it.
  3. Saute Aromatics:
    • In a large pot, heat the oil over medium heat. Add minced garlic, chopped onion, and grated ginger. Saute until the onions are translucent.
  4. Add Vegetables:
    • Add the chopped mixed vegetables to the pot and cook for about 5 minutes until they are slightly tender.
  5. Add Sweet Corn:
    • Add the sweet corn kernels to the pot and stir well.
  6. Pour in Broth:
    • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to simmer.
  7. Season the Soup:
    • Add soy sauce, salt, and pepper to taste. You can also add a teaspoon of sesame oil for extra flavor.
  8. Thicken the Soup:
    • In a small bowl, mix cornstarch with water to make a slurry. Gradually pour the slurry into the simmering soup while stirring continuously until the soup thickens.
  9. Simmer:
    • Let the soup simmer for an additional 5-7 minutes to allow the flavors to meld.
  10. Serve:
    • Ladle the hot soup into bowls, garnish with chopped green onions, and serve immediately.
